Here's a vegan spin on paella, a traditional Spanish dish made of rice and seafood. Instead of seafood, this dish uses cashews as the protein. It's fun and easy to cook, and gives you one more excuse to open a bottle of wine. But remember: When cooking with wine--in this case, white wine-- use a decent wine. Trust me, your taste buds will thank you.

1 large Vidalia (or onion of your choice) onion, chopped
    4 tbsp organic olive oil
    12 oz organic brown rice
1 large carton organic vegetable stock
    6 oz dry white wine
1 16 oz can organic chopped tomatoes
    1 tbsp tomato puree
    ½ tsp dried tarragon
    1 tsp dried basil
    2 cloves garlic, minced
    1 tsp oregano
    1 red pepper, chopped
    3 sticks celery, chopped
1 cup mushrooms, whatever is locally available, chopped
    ½ cup frozen peas
    ¼ cup broken cashew nuts
Sea salt and pepper to taste

    Directions:

    1. In a large, heavy saucepan fry the onion in 4 tbsp olive oil.

    2. Add rice to the pot.

    3. Add vegetable stock, wine(remember what I said about the wine!), tomatoes, tomato puree, tarragon, basil, garlic, and oregano to the pot.

    4. Simmer for 10 to 15 minutes. Add peppers, celery, and mushrooms and cook for another 30 minutes until the rice is cooked.

    5. Add peas, cashew nuts, salt, and pepper.

    6. Heat through until peas are ready and serve.

3 Retro recipes and classic snacks that will save you money and remind you of your childhood. As a kid of the 80's, I am no stranger to recipes that were passed along from generation to generation. Although it was always fun eating TV dinners while watching Wheel of Fortune and heating up that Hungry Man dessert brownie, I thoroughly enjoyed when my parents actually cooked something. In fact, when I went to college, a lot of these recipes worked for my budget and time. What college kid wants to stay home cooking foie gras or drumming up some recipe for stuffed beef sirloin? That may sound good, but if you don't have the time for it, you might as well not even touch it. The following are recipes from the days of yore (well, my days of yore) that I know you will enjoy.

I like a man who can handle a real beer. Don't get me wrong, Bud Light is all well and good. And, I'll even tolerate the taste of a Natty or a Keystone if the situation (and the wallet) merits it. But, these are the beers to buy me if you really want to get my attention in a busy bar. A girl cannot live on Corona alone, nor would I want to. I'll take a nice dark beer over something light and fluffy any day. And god help you if you think I'm drinking Mikes.

When you aren't looking to fit as many light, watery beers into your belly as possible, try out this darker and infinitely tastier brews. Meant to be enjoyed, not pounded. And since we're going by least tapped beverages, I'm putting Arrogant Bastard at the top of the list. Have to show love for my San Diego-based brewers, and it still has a robust, rich taste at a high alcohol percentage. Cheers!

Well then you've got to find the way to their heart through their stomach, and their stomach is like their Dad and he's already kind of pissed at you.
