For the uninitiated, Mother’s Day Brunch is one of the busiest mornings in the restaurant industry. Since most brunches charge per plate, it can get rather expensive. I once created a rose-laden tea table for my mother, serving her breakfast w/all of her crystal and china. She loved it so much that it became a tradition for the next ten years. You can get more bang for your buck at the grocery store, not have to fight long lines or wait for a table, and Mom will appreciate the effort you went to. Since brunch is breakfast & lunch rolled into one, you can get away with having pretty much anything you want. These items are easy to make and you can reward yourself with tons of champagne! Remember, it's all for Mom. (wink, wink)

    Belgian Waffles

    Preheat waffle iron

    2 cups Original Bisquick mix
    1 1/3 cups milk
    2 tablespoons vegetable oil
    1 egg
    1 tsp cinnamon
    1 tsp vanilla extract
    Stir ingredients until blended.

    Pour onto center of hot greased waffle iron; close lid.

    Bake about 5 minutes or until steaming stops. Place waffles on platter, dust with powdered sugar.

    Toppings: fresh strawberries, whipped butter, syrup, sliced bananas. Guests can use the fruit platter to garnish.

    Roasted Potatoes

    2 pounds petite red potatoes, washed & unpeeled
    3 tbsp olive oil
    Cracked black pepper
    Coarse sea salt
    3 cloves garlic, peeled
    1 sprig of fresh rosemary

    Preheat oven to 350 degrees. Remove rosemary needles from branch, and mince with a French Knife. Set aside. Mince garlic into small pieces and set aside. Cut potatoes into 1-inch cubes and place in large bowl. Toss with olive oil, rosemary, and garlic making sure to coat evenly. Season to taste with salt and pepper. Place coated mixture onto lightly greased baking sheet, and place in oven. Bake for 30-45 minutes, or until potatoes are lightly crispy on outside, and soft on inside. Take care to stir them with a spatula halfway through the cooking cycle.

    Sauteed Vegetables

    Most vegetable mixes include:

    1 cup chopped or 5 spears of asperagus,
    1 cup sliced carrot rounds
    1 cup haricots verts or French cut green beans
    1 cup sliced yellow squash rounds
    1 cup sliced zucchini rounds

    If you're feeling lazy, buy this mix in the frozen food section of your grocery store. Either chop or just throw the contents of the bag into a non-stick skillet. Heat on medium and drizzle two tsp of extra-virgin olive oil over it all. Sprinkle sea salt and black pepper. Toss to coat in the pan and sautee until veggies are crisp but softening. Transfer to a decorative dish and sprinkle with parmesean cheese, if desired.

    Turkey Maple Sausage

    To save time, throw everything together the night before and cook in the morning. I know this looks like a lot, but if you notice, it’s mostly herbs and seasonings which any self-respecting cook will already have in their cabinet.

    1 1/4 pounds ground turkey
    1/2 cup chopped parsley
    1/2 cup minced shallots
    1 teaspoon crushed red pepper flakes
    1 teaspoon salt
    1/4 teaspoon freshly ground pepper
    1 teaspoon dried sage
    1 teaspoon dried thyme
    1/4 cup pure maple syrup
    1 egg, lightly beaten
    2 tablespoons dried bread crumbs
    2 tablespoons canola oil

    In a large bowl, mix together turkey with the rest of the ingredients except the oil. Refrigerate for 1 hour.

    Preheat a large skillet over medium heat. Shape the sausage into 12 patties, about 2 1/2 inches in diameter.

    Heat the oil in the skillet, then brown the sausages for 2 minutes on each side. Reduce heat to low, cover pan and continue to cook.

    Turn sausages occasionally, for 6 minutes more or until sausages are crisp and cooked through. Serve immediately.

    Easy as pie, folks. Just a little labor will save you big bucks, as most pre-made fruit trays will run $15-$25. Buying and cutting the fruit yourself will run maybe $10 and you can arrange it however you want.

    Most trays include strawberries, melon, raspberries – depending on the price, you can serve just one or feature all of these on a decorative platter. Rinse fruit, drain and pat dry.

    Slice strawberries into thirds, slice melons into bite-size chunks and leave raspberries as is. Arrange in order or random design, leaving room in the center for a small glass or crystal dish. Fill dish with whipped cream or Cool Whip.
