Make Paula Dean proud and use real butter here, none of that fake stuff in a tub. Besides, that fake stuff is only a few molecules away from being plastic. No one wants plastic in their cookies. It's probably a good idea to soften the butter here too.

Use all-purpose flour here, not fancy cake flour or bread flour or any weird alien flour. All-purpose flour is just as the name suggests; it can be used for all kinds of purposes, like making gingerbread men.

To compliment the ginger, cinnamon brings more of that fall harvest flavoring to these holiday cookies. Like the ginger, the cinnamon should be ground into a powder before added to this recipe. No need to break out the mortar and pestle though, ground cinnamon is commonly sold in the spice aisle at the grocery store.
