    Water

    1 Cup lukewarm water, in a small bowl

    1/4 Cup Add to lukewarm water and sugar. Using a fork, stir the mixture until the yeast is dissolved and water has turned a tan color. Let yeast stand until creamy and foamy, about 10 mins

    1 1/2 Cups. Note you can use 3 cups of regular and not use the wheat below, but I like to use wheat for taste and health reasons.In a food processor or with your hands, combine the 3 cups flour.You can do my hand, add dry ingredients into a bowl and proceed as directed.

    whole wheat flour

    1 1/2 Cups. Mix with flour above - you always need a mix of white with wheat otherwise it will be to tough. Add to food processor or bowl.

    1 TeaspoonAdd salt to food processor mix and pulse 3 to 4 times or if doing by hand -knead.

    1 1/2 teaspoonsAdd to processor mix along with yeast mix. Pulse/knead until the dough comes together, adding more flour as needed until dough is smooth.

    Transfer to clean surface; knead 4 or 5 times until the dough smoothly forms into a ball. Brush the inside of a medium bowl with olive oil, and place the dough in the bowl. Cover tightly with plastic wrap, and place in a warm spot (warm oven) until doubled in size, about 40 mins. Remove plastic wrap, and place your fist in the center of the dough to punch it down. Fold the dough back onto itself 4 or 5 times. Turn dough over, folded-side down, cover with plastic wrap, and return to the warm spot to rise again until the dough has doubled in size, about 40 minutes. Punch down the dough, and transfer to a clean surface. Divide the dough in half, and knead each half 4 or 5 turns into a ball. Lightly flour a clean surface and roll 1 dough ball out into a thin layer (to cover a pizza stone/cookie sheet). Sprinkle cornmeal onto the stone/sheet and arrange the pizza dough on top of the cornmeal

    Grill

    Heat a BBQ - one side on high and the other on low. Spray with Olive oil and set the dough on the grill, cook each side until crispy and lightly brown (it should bubble up too). One side should be more cooked than the other, approx 3 minutes on each side - move to cooler side if necessary.Remove from grill and top. Top on the side that is more cooked. Place back on the grill and close for 2-3 minutes. Finished.Note: watch the grill as the dough cooks fast.
