Stuffing Thanksgiving turkey down people throats becoming hard? Well, we need to make sure we have the right amount of Turkey gravy to wash that bad boy down. Continuing our Thanksgiving dinner endeavor, let's take a look at another feast staple, turkey gravy. It can save a dry turkey breast taking it from dog food to delicious. It enhances your mashed potatoes. It can even make the unidentifiable casseroles palatable. You can tell Aunt Edna you truly LOVED her black bean, egg and eggplant goodness. I think I just threw up in my mouth.

Prep Step 1
Pour drippings through a wire strainer into a 1 quart glass measuring cup. Skim off the fat and set aside 1 cup of the drippings. An easy way to do that is to let the stuff cool for 5 minutes. The fat will rise to the top. Then you can plunge a baster (looks like a giant syringe) into the juice part, squeeze to capture the golden juices, then transfer them to the saucepan. Just toss the fat. Now when I'm saying drippings, this is another name for all the juices and "stuff" that are left in your oven bag after you cook the turkey. Plenty of things drip but these are the only juices you should be collecting. Write that down. - 3
