    Vegetable Ceviche

    VEGETALBE CEVICHE
    Ingredients: 1 can artichoke hearts (14oz), drained and chopped 1 -2 large ripe tomatoes, seeded and chopped 1/2 cup mushrooms, cleaned, stemmed and chopped 1 scallions, minced 1 large clove garlic, minced ¼ cup fresh lime juice 1 Tbsp Olive Oil 1-2 ripe avocados, peeled, pitted, chopped Salt and pepper to taste cholula or tapatio to taste Corn or Pita: 1 Container Whole Wheat Pita Bread OR corn tortillas (or store bought Pita Chips or tortilla chips)


    Instructions: Ceviche: In medium size bowl combine first 7 ingredients. Cover with plastic wrap and refrigerate for 30 minutes. Stir in avocado, season with salt and pepper. Serve as a dip for the Pita. Pita/Corn Chips: Cut Pita in half and then split open each half. Then cut into triangles (if using tortillas, cut in triangles). Spay bottom of 2 cookie sheets with Olive Oil cooking spray. Place pita chips on cookie sheets and then drizzle some Olive oil over and a dash of garlic powder, salt, and paprika (to spice it up replace the paprika with chili powder.) Bake at 350 for 7-10 minutes, until they are brown and crispy. Turn chips if necessary. Lay chips on paper towel and then repeat until they are all cooked.

    Grilled pizza

    Pizza Dough

    Ingredients:
    1 cup lukewarm water
    1/4-teaspoon sugar
    1-Tablespoon dry yeast
    2 3/4 to 3 1/4 cups all-purpose flour ( I usually use 1/2 whole wheat and 1/2 regular)
    1-teaspoon salt
    1 1/2 Tablespoons olive oil
    Cornmeal for dusting
    (Enough for approx. 2 whole pizzas – double the recipe to make extra dough that can be refrigerated for 1 day or frozen for up to 3 months)

    Instructions:
    Pour 1 cup lukewarm water into a small bowl. Add the sugar, and sprinkle in the yeast. Using a fork, stir the mixture until the yeast is dissolved and water has turned a tan color. Let yeast stand until creamy and foamy, about 10 mins. In a food processor or with your hands, combine the 2 3/4 cups flour and salt, and pulse 3 to 4 times or knead. Add yeast mixture and 1 1/2 tablespoons olive oil.

    Pulse/knead until the dough comes together, adding more flour as needed until dough is smooth. Transfer to clean surface; knead 4 or 5 times until the dough smoothly forms into a ball. Brush the inside of a medium bowl with olive oil, and place the dough in the bowl.

    Cover tightly with plastic wrap, and place in a warm spot (warm oven) until doubled in size, about 40 mins. Remove plastic wrap, and place your fist in the center of the dough to punch it down. Fold the dough back onto itself 4 or 5 times. Turn dough over, folded-side down, cover with plastic wrap, and return to the warm spot to rise again until the dough has doubled in size, about 40 minutes. Punch down the dough, and transfer to a clean surface.

    Divide the dough in half, and knead each half 4 or 5 turns into a ball. Lightly flour a clean surface and roll 1 dough ball out into a thin layer (to cover a pizza peel or cookie sheet to use for transferring the dough). Sprinkle cornmeal onto the peel/sheet and arrange the pizza dough on top of the cornmeal.

    Heat the grill - half on high and half on low. Spray some Olive oil on the grill. Shimmy the dough onto the grill and let it cook - until it gets slightly crusty and brown, then flip to other side. Once both sides are nicely browned (the dough should bubble) remove from the grill and top. Place back on the grill and close the lid for a few more minutes.

    Note: You can top the pizzas yourself OR set out all the ingredients and let your guests create their own…

    Thai Pizza

    Ingredients:
    Olive Oil
    Spices to taste (salt, pepper, garlic, basil, and crushed peppers)
    1 package cooked shrimp
    1 jar spicy Peanut Thai sauce (Trader Joe’s makes a great one)
    1 Red Onion (sliced and caramelized)
    Grated or sliced Mozzarella cheese
    1 package goat cheese
    Fresh cilantro

    Traditional Pizza

    Ingredients:
    Homemade pizza dough, browned
    1 can tomato sauce or crushed tomatoes
    Spices to taste (salt, pepper, garlic, basil, and crushed peppers)
    Grated or sliced combination of Mozzarella and Fontina cheeses
    Optional: Sautéed onions, peppers and mushrooms, Italian sausage or Pepperoni
    Parmesan cheese

    Aimee made this for me recently when I was recovering from surgery - it is so yummy. This is so easy and yummy - perfect for when you need the comfor of italian pasta but don't want the calories/fat.

    -1 package Jenny O Italian turkey suasage - I like hot
    -1 jar marinara sauce
    -1 onion
    -little olive oil
    -pinch of cinnamon
    -pinch of sugar
    -Pasta of your choice

    Saute the sausage and onions then add the jar of marinara sauce. Add a pinch of cinnamon and sugar then simmer all flavors together for 20 minutes. Serve over pastea with some parmesean and basil. It's that simple!
