American cheese is a type of processed cheese. It can be orange, yellow, or white in color, is mild and faintly sweet in flavor, has a medium-firm consistency, and has a very low melting point.
Very early in its history, American cheese was only white in color—as it was made from a blend of cheeses which were originally only white. However, the later versions are often a yellow hue due to the addition of annatto, a sweet and nutty seasoning added to Cheddar and to Colby so that by the late 1800s American cheese was often simply called "yellow cheese."
Today’s American cheese is, by law, required to be manufactured from at least 2 types of cheese, and must contain at least 51% "Other ingredients" which normally include: milk, whey, milkfat, milk protein concentrate, whey protein concentrate, saturated oil, emulsifiers, and salt. Because its manufacturing process differs from "unprocessed"/raw/natural cheeses, American cheese can not be legally sold under the name "cheese" in the US.

Monterey Jack is an American semihard cheese, customarily pale yellow, made using cow's milk. It is commonly sold by itself, or mixed with Colby to make a marbled cheese known as Colby-Jack. Cheddar-Jack varieties are also available.
In its earliest form, Monterey Jack was made by the Mexican Franciscan friars of Monterey, California, during the 19th century. Californian businessman David Jack sold the cheese commercially. He produced a mild, white cheese, which came to be known as "Jack's Cheese", and eventually "Monterey Jack".
A common misspelling is "Monterrey" Jack, presumably in confusion with the Mexican city of Monterrey.

Provolone is an Italian cheese that originated in Casilli near Vesuvius, where it is still produced in shapes varying from 10 to 15 cm long pear, sausage, or cone shapes. Provolone-type cheeses are also produced in other countries. The most important provolone production region is Northern Italy. Provolone, provola, and provoleta are versions of the same basic cheese. Some versions of provolone are smoked.

Gouda is a Dutch yellow cheese made from cow's milk. It is named after the city of Gouda in the Netherlands. One of the most popular cheeses worldwide, the name is used today as a general term for a variety of similar cheese produced in the traditional Dutch manner as well as the Dutch original.

Mozzarella

Mozzarella is a cheese, originally from southern Italy, traditionally made from Italian buffalo milk by the pasta filata method.
Mozzarella received a Traditional Specialities Guaranteed certification from the European Union in 1998. This protection scheme requires that mozzarella sold in the European Union is produced according to a traditional recipe. The TSG certification does not specify the source of the milk, so any type of milk can be used. In Italy mozzarella made with the milk of the Italian water buffalo is an important variety. The Italian buffalo mozzarella sold as Mozzarella di Bufala Campana is protected under the EU's Protected Designation of Origin scheme and may only be produced in select locations in the regions of Campania, Lazio, Apulia and Molise.
Fresh mozzarella is generally white, but may vary seasonally to slightly yellow depending on the animal's diet. It is a semi-soft cheese. Due to its high moisture content, it is traditionally served the day after it is made, but can be kept in brine for up to a week or longer when sold in vacuum-sealed packages.

Muenster cheese

Muenster or munster is a semi-soft cheese from the United States, not to be confused with the French cheese Munster or the processed dairy food Sweet Muenster Cheese. It is also unrelated to the German city of Münster, or to the Irish province of Munster.
Its taste varies from bland, like a white American cheese, to sharp, like a jack cheese. Muenster cheese is lower in fat per serving than many other popular store bought cheeses such as cheddar, mozzarella and Monterey jack.
Muenster is pale in color and smooth in texture with an orange rind. The cheese is made from cow's milk. The rind's orange color is from annatto, a sweet and nutty seasoning used to add flavor to cheeses such as Cheddar, Colby, Red Leicester, and Mimolette. Muenster usually has a very mild flavor and smooth, soft texture. In some cases, when properly aged, it can develop a strong flavor with a pungent aroma. This cheese is commonly served as an appetizer. Havarti or Cream Havarti is a semi-soft Danish cow's milk cheese. It is a table cheese that can be sliced, grilled, or melted.
In 1952 Havarti cheese was named after the Havarthigaard in Øverød, north of Copenhagen, where the owner Hanne Nielsen had developed modern cheesemaking in Danish agriculture during the last half of the 19th century. Havarti was, however, not introduced in Denmark until approximately 1920. Havarti is made like most cheeses, by introducing rennet to milk to cause curdling. The curds are pressed into cheese molds which are drained, and then the cheese is aged. Havarti is a washed curd cheese, which contributes to the subtle flavor of the cheese.
Havarti is an interior-ripened cheese that is rindless, smooth and slightly bright-surfaced with a cream to yellow color depending on type. It has very small and irregular openings distributed in the mass.
Havarti has a buttery aroma and can be somewhat sharp in the stronger varieties, much like Swiss cheese. The taste is buttery, and from somewhat sweet to very sweet, and it is slightly acidic. It is typically aged about three months, though when the cheese is older it becomes more salty and tastes like hazelnut.

Buffalo mozzarella

Buffalo mozzarella is a mozzarella made from the milk of the domestic Italian water buffalo. It is a product traditionally produced in Campania, especially in the provinces of Caserta and Salerno.
The term mozzarella derives from the procedure called mozzatura which means "cutting by hand", separating from the curd, and serving in individual pieces, that is, the process of separation of the curd into small balls. It is appreciated for its versatility and elastic texture and often called "the queen of the Mediterranean cuisine", "white gold" or "the pearl of the table", in compliance with the finest food quality and taste of the product.
The buffalo mozzarella sold as Mozzarella di Bufala Campana has been granted the status of Denominazione di origine controllata since 1993. Since 1996 it is also protected under the EU's Protected Designation of Origin and Protected Geographical Indication schemes. The protected name requires that it may only be produced with a traditional recipe in select locations in the regions of Campania, Lazio, Apulia and Molise.

Velveeta

Velveeta is the brand name of a processed cheese product having a taste that is identified as a type of American cheese, but with a softer and smoother texture than cheese. As a result, when melted/heated, Velveeta maintains a fully integrated, even, clump-free liquid texture—the opposite of what results when cheese is melted or cooked at high heat. It was invented in 1918 by Emil Frey of the Monroe Cheese Company in Monroe, New York. In 1923, The Velveeta Cheese Company was incorporated as a separate company, and was sold to Kraft Foods in 1927. The product was advertised at the time as a nutritious health food. According to Kraft's website, in the 1930s, Velveeta became the first cheese product to gain the American Medical Association's seal of approval. It was reformulated in 1953 as a cheese spread. Velveeta is labeled in the United States as a "Pasteurized Recipe Cheese Product". The name "Velveeta" is intended to connote a velvety smooth edible product. Smoothness and melting ability are promoted as its properties that result by reincorporating the whey with the curd. The brand has also been successfully spun off into a varied, Velveeta-based product line.

Asiago cheese

Asiago is an Italian cow's milk cheese that can assume different textures, according to its aging, from smooth for the fresh Asiago to a crumbly texture for the aged cheese of which the flavor is reminiscent of Parmesan. The aged cheese is often grated in salads, soups, pastas, and sauces while the fresh Asiago is sliced to prepare panini or sandwiches; it can also be melted on a variety of dishes and cantaloupe.
As Asiago has a protected designation of origin, the only "original" Asiago is produced in the alpine area of the town of Asiago, province of Vicenza, in the Veneto region. Asiago cheese is one of the most typical products of the Veneto region. It was, and still is, the most popular and widely used cheese in the DOP area where it is produced. The production area is strictly defined: it starts from the meadows of the Po Valley and finishes in the Alpine pastures between the Asiago Plateau and the Trentino's highlands. The officially designated area where the milk is collected and Asiago DOP cheese is produced, extends to four provinces in the north-east of Italy: the entire area of Vicenza and Trento and part of the provinces of Padua and Treviso.

Parmesan

Parmigiano-Reggiano

Parmigiano-Reggiano, or Parmesan cheese, is a hard, granular cheese.
It is named after the producing areas, which comprise the Provinces of Parma, Reggio Emilia, Bologna, Modena, and Mantova, Italy. Under Italian law, only cheese produced in these provinces may be labelled "Parmigiano-Reggiano", and European law classifies the name, as well as the translation "Parmesan", as a protected designation of origin. Parmigiano is the Italian adjective for Parma and Reggiano that for Reggio Emilia. In the U.S., Canada, and other countries outside the EU, the name "Parmesan" is generally only used for cheeses similar to Parmigiano-Reggiano, with the full Italian name used for traditional Parmigiano-Reggiano cheese.

Fontina

Fontina is an Italian cow's milk cheese. Although made throughout the year, the best cheese is obtained during the summer when the cows are moved to an altitude of 1,800 to 2,300 meters and fed only with rich grass to give it a distinctive aroma. Fontina has PDO status under European law.

Comté

Comté is a French cheese made from unpasteurized cow's milk in the Franche-Comté region of eastern France. Comté has the highest production of all French AOC cheeses, around 40,000 tonnes annually.
The cheese is made in flat circular discs, each between 40 cm and 70 cm in diameter, and around 10 cm in height. Each disc weighs up to 50 kg with an FDM around 45%. The rind is usually a dusty-brown colour, and the internal pâte is a pale creamy yellow. The texture is relatively hard and flexible, and the taste is strong and slightly sweet.

Brie

Brie is a soft cow's milk cheese named after Brie, the French region from which it originated. It is pale in color with a slight grayish tinge under a rind of white mold. The whitish moldy rind is typically eaten, its flavor depending largely upon the ingredients used and its manufacturing environment.

Pepperoni

Pepperoni, also known as pepperoni sausage, is an American variety of salami, usually made from cured pork and beef. Pepperoni is characteristically soft, slightly smoky, and bright red in color. Thinly sliced pepperoni is a popular pizza topping in American-style pizzerias and is used as filling in the West Virginia pepperoni roll. It is also used to make some varieties of submarine sandwiches.

Cream cheese

Cream cheese is a soft, mild-tasting fresh cheese with a high fat content. Stabilizers such as carob bean gum and carrageenan are added.
The US Food and Drug Administration defines cream cheese as containing at least 33% milk fat with a moisture content of not more than 55%, and a pH range of 4.4 to 4.9. In other countries, it is defined differently and may need a considerably higher fat content.
Cream cheese is not naturally matured and is meant to be consumed fresh, and so it differs from other soft cheeses such as Brie and Neufchâtel. It is more comparable in taste, texture and production methods to Boursin and Mascarpone.

Manchego cheese

Manchego is a cheese made in the La Mancha region of Spain from the milk of sheep of the manchega breed. Official manchego cheese is to be aged for between 60 days and two years.
Manchego has a firm and compact consistency and a buttery texture, and often contains small, unevenly-distributed air pockets. The colour of the cheese varies from white to ivory-yellow, and the inedible rind from yellow to brownish beige. The cheese has a distinctive flavour, well developed but not too strong, creamy with a slight piquancy, and leaves an aftertaste that is characteristic of sheep’s milk.
The designation queso manchego is protected under Spain's Denominación de Origen regulatory classification system, and the cheese has been granted Protected Designation of Origin status by the European Union.

Blue cheese

Blue cheese is a general classification of cow's milk, sheep's milk, or goat's milk cheeses that have had cultures of the mold Penicillium added so that the final product is spotted or veined throughout with blue, blue-grey, blue-green, or blue-brown mold and carries a distinct smell, either from that or various specially cultivated bacteria. Some blue cheeses are injected with spores before the curds form and others have spores mixed in with the curds after they form. Blue cheeses are typically aged in a temperature-controlled environment such as a cave. Blue cheese can be eaten by itself or can be spread, crumbled or melted into or over foods.
In the European Union, many blue cheeses such as Roquefort, Danablu, Gorgonzola and Blue Stilton carry a protected designation of origin, meaning they can bear the name only if they have been made in a particular region in a certain country. Similarly, individual countries have protections of their own such as France's Appellation d'Origine Contrôlée and Italy's Denominazione di Origine Protetta. Blue cheeses with no protected origin name are designated simply "blue cheese".
