Dere character types are so common in anime that if you've watched even a handful of shows, you've probably seen at least one. "Dere" means "lovey dovey" and each "dere" type shows love and interacts with the world in a different way.
You may be familiar with the tsundere and the yandere, two of the most popular dere types. What you might not know is that there is a whole world of anime dere types out there, including the shy and demure dandere, the marriage-obsessed kekkondere, and the alcohol-loving yottadere. These character archetypes appear in every anime, though the more complex characters will often fit into more than one category.

Danderes have trouble talking to other people because of shyness or anxiety. They may be completely isolated, or they may just get nervous from time to time. Often, a new relationship will help bring them out of their shells.
Examples: Hinata Hyuuga - Naruto, Nana Ebina - Himouto! Umaru-chan
Calm, collected, and reserved, the kuudere is the epitome of cool. These characters aren't quiet because they're afraid of other people, they simply prefer to keep to themselves and avoid small talk.
Examples: Rei Ayanami - Neon Genesis Evangelion, Kanade Tachibana - Angel Beats
If you've ever heard the phrase "it's not like I like you or anything - baka!" you've encountered a tsundere. There are actually two types of tsundere. The first is rude and standoffish to everyone until a beloved person breaks through their shell and their softer side emerges. The second is generally nice, but put on the tsundere act when it comes to the person they love.
The male variant of the tsundere is occasionally called a 'thugdere' but it's also totally cool to just call characters like Vegeta tsunderes.

A typical mayadere begins as a dangerous and unpredictable antagonist who may come across as completely evil. However, falling in love may cause her behavior to soften somewhat, or even change her behavior completely.
Examples: Esdeath - Akame ga Kill, Illya - Fate/Stay Night
