    One head of cabbage shredded
    1 or 2 big carrots shredded
    1/3 cup of sugar
    1 cup white vinegar
    3/4 cups vegetable oil
    1/2 – 1 tbsp dried mustard
    1/2 – 1 tbsp salt
    Pepper to taste

    - Sprinkle cabbage and carrots with sugar; mix to combine.
    - In a saucepan, combine vinegar, oil, dried mustard, salt and pepper; stir and bring to a boil.
    - Pour hot liquid over the coleslaw; mix well.

    St. Hubert's Roast Chicken

    4 tsp salt
    2 tsp paprika
    1 tsp cayenne pepper
    1 tsp onion powder
    1 tsp thyme
    1 tsp white pepper
    1/2 tsp garlic powder
    1/2 tsp black pepper
    1 large roasting chicken
    1 cup chopped onion

    - Remove giblets from chicken and clean the cavity well; pat dry with paper towels.
    - In a small bowl, thoroughly combine all the spices.
    - Rub mixture into the chicken, both inside and out evenly.
    - Place seasoned chicken in a resealable plastic bag; seal and refrigerate overnight.
    - When ready to roast chicken, stuff cavity with onions; place in a baking pan.
    - Roast, uncovered, at 250 degrees for 5 hours.
    - After the first hour, baste chicken occasionally with pan juices.
    - Let chicken rest for 10 minutes before carving.

    Spare ribs (quantity depends on number of people)
    1/2 cup (125 mL) chili sauce
    1/3 cup (85 mL) vinegar
    1/2 cup (100 g) brown sugar
    2 cloves garlic
    2 tbsp (30 mL) soy sauce
    Salt and pepper to taste
    2 small jars (2x 128 mL) apricot Heinz baby food

    - Boil ribs in water for 45 minutes; combine remaining ingredients.
    - Place ribs in marinade; leave for 2 hours.
    - Cook spare ribs at 350 F (180 C) for an hour or on a grill until golden.

    160 g (1-1/2 cups) smoked paprika
    160 g (1-1/2 cups) paprika
    200 g (1 cup) celery salt
    200 g (1 cup) sugar
    100 g (1 cup) black pepper, freshly ground
    100 g (1/2 cup) ground mustard
    60 g (1/2 cup) onion powder
    20 g (4 teaspoons) cayenne
    40 g (1/2 cup) grated lemon peel

    - Combine smoked paprika, paprika, celery salt, sugar, black pepper, ground mustard, onion powder, cayenne and grated lemon peel.
    - Place into tight fitting bottles; use within 3 months.

    Vinegry Coleslaw Dressing

    3 tsp. sugar
    1/4 cup white vinegar
    1/2 cup canola oil
    1 tsp. yellow mustard
    1 tsp. parsley
    1 pinch oregano
    1 pinch Italian seasoning

    - Mix all ingredients together. Makes 12 servings.

    Fresh mushrooms - 1/2 pound, chopped
    Green onions - 2, chopped
    Butter- 1/4 cup
    Parsley - 1 tablespoon, chopped
    White wine - 1/2 cup
    Marinade - 1/2 cup
    Tomato sauce - 1 tablespoon
    Brandy - 2 tablespoons

    - In a skillet, saute mushrooms and onions in butter until slightly tender.
    - Stir in rest of the ingredients; allow to simmer for a few minutes.
