Burrito

A burrito is a type of Mexican and Tex-Mex food, consisting of a wheat flour tortilla wrapped or folded into a cylindrical shape to completely enclose the filling. The flour tortilla is usually lightly grilled or steamed, to soften it and make it more pliable.
In Mexico, meat and refried beans are sometimes the only fillings. In the United States, burrito fillings generally include a combination of ingredients such as Mexican-style rice or plain rice, refried beans or beans, lettuce, salsa, meat, guacamole, cheese, and sour cream, and the size varies.

Salsa

Salsa is the Spanish term for sauce, and in English-speaking countries usually refers to the sauces typical of Mexican cuisine known as salsa picante, particularly those used as dips. They are often tomato-based, although many are not, and they are typically piquant, ranging from mild to extremely hot.

A quesadilla is a wheat tortilla or a corn tortilla filled with a savoury mixture containing cheese, other ingredients, and/or vegetables, cooked often on a griddle, then folded in half to form a half-moon shape.

Guacamole

Guacamole is an avocado-based dip that began with the Aztecs in Mexico. In addition to its use in modern Mexican cuisine it has also become part of American cuisine as a dip, condiment and salad ingredient. It is traditionally made by mashing ripe avocados and sea salt with a molcajete. Some recipes call for tomato, onion, garlic, lemon or lime juice, chili or cayenne pepper, yogurt, cilantro or basil, jalapeño and/or additional seasonings.

Nachos

Nachos is a dish from northern Mexico. The dish is composed of tortilla chips covered with cheese or cheese-based sauce, and is often served as a snack. More elaborate versions add more ingredients and can be served as a main dish. First created circa 1943 by Ignacio "Nacho" Anaya, the original nachos consisted of fried corn tortillas covered with melted cheddar cheese and sliced jalapeño peppers.

Empanada

An empanada is a stuffed bread or pastry baked or fried in many countries in Latin Europe, Latin America, the Southwestern United States, and parts of Southeast Asia. The name comes from the Galician, Portuguese, and Spanish verb empanar, meaning to wrap or coat in bread.
Empanadas are made by folding dough or bread with stuffing consisting with a variety of meat, cheese, huitlacoche, vegetables, fruits, and others.

Enchilada

An enchilada is a corn tortilla rolled around a filling and covered with a chili pepper sauce. Enchiladas can be filled with a variety of ingredients, including meat, cheese, beans, potatoes, vegetables, seafood or combinations.

Tamale

A tamale is a traditional Mesoamerican dish made of masa, which is steamed or boiled in a leaf wrapper. The wrapping is discarded before eating. Tamales can be filled with meats, cheeses, fruits, vegetables, chilies or any preparation according to taste, and both the filling and the cooking liquid may be seasoned.
Tamales have been traced back to the Ancient Maya people, who prepared them for feasts as early as the Preclassic period. Maya people called their corn tortillas and tamales both utah.
Tamales originated in Mesoamerica as early as 8000 to 5000 BC. Aztec and Maya civilizations, as well as the Olmeca and Tolteca before them, used tamales as portable food, often to support their armies, but also for hunters and travelers. Tamale use in the Inca Empire had been reported long before the Spanish visited the New World.
The diversity of native languages in Mesoamerica led to a number of local words for the tamal, many of which remain in use. The Spanish singular of tamales is tamal. The English word "tamale" is an American back-formation of tamales.

Carne asada

In Mexican cuisine, carne asada is made from thin marinated beef steak, usually skirt steak, flank steak or flap steak. It is usually cooked with a certain amount of searing to impart a charred flavor. Carne asada can be served as a main dish or as an ingredient in other dishes. Carne asada is often served with fresh guacamole, grilled onions, black beans or frijoles charros, rice, tortillas and fresh salsa. Carne asada can also be topped with chismol or pico de gallo.
The dish is commonly prepared in the northern and western parts of Mexico as well as in the American Southwest. It is sold at Mexican meat markets called carnicerías in the American Southwest and especially those states with Mexican/Mexican American enclaves.

Churro

A churro is a fried-dough pastry—predominantly choux—based snack. Churros are popular in Spain, France, the Philippines, Portugal, Ibero-America and parts of the United States. In Spain, churros can either be thin or long and thick . They are normally eaten for breakfast dipped in hot chocolate or café con leche.

A tortilla chip is a snack food made from corn tortillas, which are cut into wedges and then fried—or baked. Corn tortillas are made of corn, vegetable oil, salt and water. Although first mass-produced in Los Angeles in the late 1940s, tortilla chips were always considered to be a Mexican food, known as totopos and tostadas. Though usually made of yellow corn, they can also be made of white, blue, or red corn. Some manufacturers include many other ingredients including wheat, sugar, and MSG.

A tres leches cake, or torta de tres leches, or pan tres leches, is a sponge cake—in some recipes, a butter cake—soaked in three kinds of milk: evaporated milk, condensed milk, and heavy cream.
When butter is not used, the Tres Leches is a very light cake, with many air bubbles. This distinct texture is why it does not have a soggy consistency, despite being soaked in a mixture of three types of milk.

Flan

Flan is an open pastry or sponge cake containing a sweet or savoury filling. A typical flan of this sort is round, with shortcrust pastry. Usually coated with sweet syrup. It is similar to a custard tart or a South African melktert.
British savoury flans may have diverged from the Spanish and French custard flans in the Middle Ages.

Taquito

A taquito, rolled taco, or flauta is a Mexican food dish most often consisting of a small rolled-up tortilla and some type of filling, including beef, cheese or chicken. The filled tortilla is crisp-fried. The dish is often topped with condiments such as sour cream and guacamole. Corn tortillas are generally used to make taquitos; the dish is more commonly known as flautas when they are larger than their taquito counterparts, and can be made with either flour or corn tortillas although using corn is more traditional. In some areas, such as New Mexico, taquito refers not to the rolled-up tortilla dish, but rather a smaller version of the taco.

Spanish rice

Spanish rice or red rice is a Mexican side dish made from white rice, tomatoes, garlic, onions, and other ingredients. It is traditionally made by sautéing the rice in a skillet until it is golden brown. Water or chicken broth is then added along with chopped tomatoes or tomato sauce.
Spanish rice is a popular dish in the American Southwest, which sometimes refers to the dish as "Mexican rice." However, Spanish rice and Mexican rice are relatively different; whereas Mexican rice sometimes uses cumin, Spanish rice uses saffron instead. The version of the dish cooked throughout Northern Mexico tends to be a more homogeneous character, often with just enough tomato and chili pepper to give the distinctive red-orange color and a smoky, garlic and onion-laden flavor. It is usually served as a side dish alongside other Mexican cuisine.

Carnitas

Carnitas, literally "little meats," is a dish of Mexican cuisine originating from the state of Michoacán. Carnitas are made by braising or simmering pork in oil or preferably lard until tender. The process takes three or four hours and the result is very tender and juicy meat, which is then typically served with chopped coriander leaves and diced onion, salsa, guacamole, tortillas, and refried beans.

Ceviche

Ceviche is a seafood dish popular in the coastal regions of the Americas, especially Central and South America. The dish is typically made from fresh raw fish cured in citrus juices, such as lemon or lime, and spiced with ají or chili peppers. Additional seasonings, such as chopped onions, salt, and coriander, may also be added. Ceviche is usually accompanied by side dishes that complement its flavors, such as sweet potato, lettuce, corn, avocado or plantain. As the dish is not cooked with heat, it must be prepared fresh to minimize the risk of food poisoning.
Along with an archaeological record suggesting the consumption of a food similar to ceviche nearly 2,000 years ago, historians believe the predecessor to the dish was brought to Peru by Moorish women from Granada, who accompanied the Spanish conquistadors and colonizers, and this dish eventually evolved into what now is considered ceviche.

Refried beans

Refried beans is a dish of cooked and mashed beans and is a traditional staple of Mexican and Tex-Mex cuisine, although each cuisine has a different approach when making the dish. Refried beans are also popular in many other Latin countries.

Margarita

The margarita is a cocktail consisting of tequila, triple sec and lime or lemon juice, often served with salt on the rim of the glass. The drink is served shaken with ice, blended with ice, or without ice. Although it has become acceptable to serve a margarita in a wide variety of glass types, ranging from cocktail and wine glasses to pint glasses and even large schooners, the drink is traditionally served in the eponymous margarita glass, a stepped-diameter variant of a cocktail glass or champagne coupe somewhat resembling an inverted sombrero.

A Cuban sandwich is a variation of a ham and cheese that was often made in cafes catering to Cuban workers in the early Cuban immigrant communities of Florida: Key West and Ybor City, Tampa. Later on, Cuban exiles and expatriates brought it to Miami where it is also still very popular. The sandwich is made with ham, roasted pork, Swiss cheese, pickles, mustard, and sometimes salami on Cuban bread.
In April 2012, the "Historic Tampa Cuban Sandwich" was designated as the "signature sandwich of the city of Tampa" by Tampa's city council.

Tostada

Tostada is a Spanish word meaning "toasted". In Mexico and other parts of Hispanic America it is the name of different local dishes which are toasted or use a toasted ingredient as the main base of their preparation. Even though the tortilla is fried, the meaning sticks with it.
In Mexican usage, tostada usually refers to a flat or bowl-shaped tortilla that is deep fried or toasted. It may also refer to any dish using a tostada as a base. It can be consumed alone, or used a base for other foods. Corn tortillas are usually used for tostadas, although tostadas made of wheat flour may occasionally be found.

Dulce de leche

Dulce de leche is a confection prepared by slowly heating sweetened milk to create a substance that derives its taste from the Maillard reaction, changing flavour and colour. Literally translated, it means "candy [made] of milk" or "sweet [made] of milk." It is popular in Latin America, notably in Mexico, Paraguay, Peru, Argentina, Chile, Uruguay, Brazil, Ecuador, Bolivia, Colombia and Venezuela. The dulce de leche of El Salvador has a soft, crumbly texture, with an almost crystallized form. Mexico had versions as manjar or cajeta which is made from goat's milk. In Cuba, dulce de leche is made from soured milk that's curdled and then sweetened. In the Dominican Republic it is made with equal parts milk and sugar with cinnamon, and the texture is more like fudge. In Puerto Rico dulce de leche is sometimes made with unsweetened coconut milk.
Dulce de leche is also popular in the Philippines, where it is usually paired with cakes or breakfast rolls. As in other places, it has also found its way into other desserts such as cakes and ice cream.
A French version, known as confiture de lait, is very similar to the spreadable forms of dulce de leche.

Arroz con pollo

Arroz con pollo is a traditional dish of Spain and Latin America, closely related to paella. In the Dominican Republic it is called locrio de pollo, and Saint Martin where it is called lokri or locreo.
There is some debate as to whether it originated in Spain. Puerto Ricans consider it one of their classic recipes. Many Puerto Ricans note that arroz con pollo can not be made without beer and annatto oil and saffron is no substitute. Beer and annatto are rarely used in Spanish cooking and never in arroz con pollo there. Annatto is frequently used in Puerto Rican cooking exceptionally in rice dishes like arroz con gandules and arroz con maiz. Beer is in many Puerto Rican dish like pollo guisado and asopao de pollo. Arroz con pollo and most Puerto Rican rice dish are highly seasoned with sofrito, which is another key ingredient in arroz con pollo.
Food writer Elisabeth Lambert Ortiz, while pointing to the international aspects of the dish, notes that origin in the Spanish forms of pilaf, and already reflected international influences: chicken was brought from India and rice from Asia; saffron was introduced by Phoenician traders; tomatoes and peppers are natives of the Americas.
