The X-Men roster is huge and always expanding, meaning there is a massive number of Marvel mutants missing from the X-Men films. The X-Men first hit pages in 1963, and ever since their first big team shakeup with Giant-Size X-Men #1 in 1975, their roster has been in a state of near-constant flux. Part of this is due to the fact that the X-Men are based out of a school, so they have a constant stream of new students to bring in and train before eventually graduating to the main team themselves.
The films can't be blamed for not using all the mutants since there's only somewhere around 20 hours of screen time to go around and hundreds of powerful mutants that all have their own fans. Naturally, though, with some characters getting sidelined in cameos, not appearing at all, or being altered to fit into the films' world, plenty of the beloved mutants have been done dirty.
